Kale Pesto Recipe

This is a great recipe for kale and puts a fun spin on homemade pesto! Starting in 2015, HGTV HOME Plants Patio Veggies and Herbs will feature a delicious kale.
Ingredients:
1 bunch of kale, rinsed, patted dry with middle stem trimmed out, leaves broken into bite size pieces
2 garlic cloves
1 cup toasted walnuts
1 lemon juiced
sea salt & freshly ground black pepper to taste
a good fruity olive oil – 1/2 to 3/4 cup
1 cup shredded Gruyere Cheese
Parmesan Cheese grated for serving
Directions:
1. Put garlic cloves & walnuts in a food processor & pulse until nuts & garlic are chopped, but not too finely.
2. Add Kale leaves, juice from the lemon, sea salt & black pepper. Pulse while adding about 1/2 cup olive oil to mixture. Stop & scrape down bowl if needed.
3. Add Gruyere to the processor & pulse a few more times to make a nice paste. Adjust oil if you like a wetter or dryer pesto. (I prefer a more chunky, less oily pesto.)
4. Cook your favorite pasta noodle and toss with a dollop of Kale Pesto, grind more black pepper on top & scatter grated Parmesan over the top for each serving. Goes well with a glass of crisp chilled wine.
