New Year's Cocktail

This fresh thyme and elderflower cocktail is perfect to make for a group at your New Year's celebration.

 Ingredients for 6-8 Cocktails:

  • 12 ounces chilled gin
  • 9 ounces St. Germain/Elderflower Liqueur
  • 1 cup fresh lime juice
  • 3 ounces thyme simple syrup (recipe below)
  • sprigs of fresh thyme

Ingredients and Directions for Simple Syrup:

  1. Bring 1 cup sugar and 1 cup water to a boil in a small saucepan. Lower heat and add a few sprigs of fresh thyme. Stir until sugar has dissolved.
  2. Remove from heat to cool completely.

Directions for Cocktail:

  1. In a pitcher mix together the gin, elderflower liqueur, lime juice and 3 ounces of the thyme simple syrup. Taste and adjust flavor by adding more simple syrup if need be. Stir well. Chill until ready to serve.
  2. To serve: fill small glasses with ice and top with cocktail mixture. Garnish with additional sprigs of fresh thyme. Happy New Year!
  3. Note: Double or triple this recipe for a crowd. Store any leftover simple syrup in a glass jar with a lid for up to 3 weeks.
