New Year's Cocktail

This fresh thyme and elderflower cocktail is perfect to make for a group at your New Year's celebration.
Ingredients for 6-8 Cocktails:
- 12 ounces chilled gin
- 9 ounces St. Germain/Elderflower Liqueur
- 1 cup fresh lime juice
- 3 ounces thyme simple syrup (recipe below)
- sprigs of fresh thyme
Ingredients and Directions for Simple Syrup:
- Bring 1 cup sugar and 1 cup water to a boil in a small saucepan. Lower heat and add a few sprigs of fresh thyme. Stir until sugar has dissolved.
- Remove from heat to cool completely.
Directions for Cocktail:
- In a pitcher mix together the gin, elderflower liqueur, lime juice and 3 ounces of the thyme simple syrup. Taste and adjust flavor by adding more simple syrup if need be. Stir well. Chill until ready to serve.
- To serve: fill small glasses with ice and top with cocktail mixture. Garnish with additional sprigs of fresh thyme. Happy New Year!
- Note: Double or triple this recipe for a crowd. Store any leftover simple syrup in a glass jar with a lid for up to 3 weeks.
